Making Gluten Free Recipes verses Dining Out at the Salad Bars

Can you say HOT! It seems that it doesn’t matter much which part of the country you are in right now, it is HOT everywhere! And as much as I love being in the kitchen this type of weather makes for the perfect excuse to dine out, not like I need an excuse, but hey, even gluten free recipe developing chefs need time out of the kitchen.

Speaking of dining out, I am reminded of a story that I heard last week from an friend of mine, who just found out she is gluten intolerant. She was relating to me her first experience of dining out and the realization of just how many of her old favorite foods contained gluten.

She said that she was sitting at the kitchen counter on Sunday, contemplating on what gluten free recipe to whip up for dinner that would be easy to make, taste yummy and all without having to turn the stove on. It was just too dang hot outside to also heat up the inside.

While she was surfing through some of my gluten free recipes on my website trying to decide what she could make that fit the bill, in walks her husband who suggests they go out to eat. She said her stomach did a little flip flop since she knew that this was going to be her first adventure dining out since learning of her gluten intolerant condition and she said she wasn’t totally sure what she could and couldn’t eat. To make it simple for herself, she suggested they go to their favorite local Soup & Salad place down the street. Thinking, what the heck there’s no gluten in salad and soup is mostly water, what could be safer and healthier, right? Well she told me that while walking down the salad bar walkway, she was enlightened beyond belief as she started to apply some of the things she had learned.

Knowing to avoid the breads and muffins was a no brainer, but then it came to the salads the questions began to surface. Those Chinese Chicken and Asian Mango mixed salads look really tasty. But that pretty innocuous look, in truth, may not be. These pre-mixed salads are made with salad dressings that all contain binding agents and modified food starch. Dressings which are not part of the gluten free diet plan. Tip – when going for salad, it is best to stick to dressings of lemon/lime juice, olive oil or just the plain wine vinegar and oil.

What about those delicious creamy pasta salad mixtures which, I agree are hard to resist, are they okay to eat…nope! Unless you are at a restaurant that caters to the special diet needs of all, you will rarely find a pasta dish that is gluten free. Not only do you need to be aware of the pasta but the sauce they are mixing in with it. Many of those creamy mixtures contain additives, possibly MSG or soy isolate, which are not healthy for some.

Lastly, when dining out be aware of the fact that most all cream soups, unless stated otherwise, WILL contain gluten. Anything which needs to be creamy and thick will have some form of starch or thickening agent which almost always contains gluten.My friend learned quickly that when dining out, even at a seemingly safe place like a soup and salad bar, the gluten intolerant individual needs to educate themselves before hand. Fat-free Pumpkin Raisin Cake
Servings: 16

Ingredients:
Non-stick cooking spray
1 2/3 cups Flour
2/3 cup Sugar
1/4 cup Nonfat dry milk
1 teaspoon Baking soda
1/2 teaspoon Baking powder
1/2 teaspoon Salt
2 teaspoons Pumpkin pie spice
1/2 cup Raisins
2 Egg whites
1 cup Canned pumpkin
1/3 cup Corn syrup, light or dark
1/3 cup Orange juice
—–FAT-FREE CREAM SAUCE—–
1 cup Nonfat vanilla yogurt
1/2 cup Confectioner’s sugar

Directions:
Spray 9-inch square baking pan with cooking spray. In large bowl combine dry ingredients; stir until smooth. Pour into prepared pan. Bake in 350 degree F oven 35 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack. If desired, serve with Fat-Free Yogurt Cream Sauce.

FAT-FREE YOGURT CREAM SAUCE: Line a strainer with paper coffee filter or cheesecloth layers. Add yogurt, set over bowl and refrigerate 4 hours. Discard drained liquid. Combine thickened yogurt and sifted confectioners’ sugar; stir until smooth. Makes about 1/2 cup sauce.
