I have tons of them, I am gluten-free. If you are only doing it for a month it’s probably easiest to just stock up on GF products. Whole Foods has an excellent line of GF breads, waffles, even muffins and cakes. Betty Crocker has GF cake and muffin mixes now that Wal-Mart carries along with many regular grocery stores. Bob’s Red Mill has a bunch of great GF flours and mixes; you can find them in most large grocery stores or online. I make pancakes all the time, substituting rice flour for the white flour.
A warning: read labels extremely carefully. Gluten/wheat is used in so many things you wouldn’t even think of: frostings, almost all canned soups (even those with no noodles), almost all spice mixes (the pre-packaged starters like taco seasoning, chili starter, etc.). However, delightfully, lots of children’s cereals are made with rice and corn and are therefore okay to eat!
If you’re looking for a specific recipe, do a Google search. GF is a very common lifestyle these days and it’s not too hard to find what you want. Much of the food is more expensive but not hard to find. Also, feel free to message me if you want more info. Always happy to help!
