The Easy Way to Gluten and Dairy Free Baking

Watching members of my family struggle for years to find both simple and tasty gluten free and dairy free food, I set out on a mission to help them by finding a number of recipes that they can use. Most off-the-shelf gluten free and dairy free products are bland and expensive, requiring you to resort to cooking your own food. As our lives are getting ever more busy, it is important that we strike a balance between recipes that are tasty and healthy and ones that take many hours of preparation and cooking.

This is actually harder than it sounds. Many of the gluten free and dairy free recipes include ingredients such as guar gum and amaranth flour, that are very hard to find and can be expensive.

Considering my families love of cakes and baking, I decided to focus on baking recipes. On this page I will provide some insights into a set of recipes that are firm favourites in our family, ones which are both simple and tasty. They are also no more expensive that their non-gluten equivalents, which was an added bonus. Many gluten free diets replace gluten with ingredients of a higher fat content that can help maintain the taste. Therefore I believe that cooking you own gluten free foods is significantly more beneficial than relying on off-the-shelf products, whose ingredients and nutritional information should be scrutinised before purchasing.

Gluten free and dairy free diets are gaining in popularity, both in the US and globally. More people are seeing the health benefits of omitting gluten (and to a lesser degree dairy) from their diet.

After spending a long time reading books and watching videos, and an even longer time in the kitchen testing the recipes, I think that I have found a set of recipes that are worth sharing. Many of the other recipes I tested were over-complicated, tasted bland or the ingredients were quite expensive. One important factor was the availability of the ingredients. I found that a number of recipes would require me to shop in specialist health food shops, and I seemed to spend an eternity hunting down specific ingredients. The recipes I found however only use ingredients available at your local store. This is important and helps to keep them affordable.

We simply love the recipes in the book, and friends and family (even the children) absolutely love them. You cannot even tell they are gluten free and dairy free. Is A Dairy Free Diet Different from a Casein Free Diet?

There are lactose intolerances, casein allergies and milk allergies. Each is a different allergy or intolerance. To alleviate symptoms milk and milk derivatives have to be removed from both diets. Some processed foods can contain lactose. Casein can be found in processed foods, binding in vitamins, cosmetics and adhesives. Product labels should be read carefully to verify that they are lactose and casein free.

Lactose Intolerance

Lactose intolerance is less common in northern and western European. It is more common in African, African-American, Native American and Mediterranean populations. Lactose is a sugar found in milk and milk produces. Lactose intolerance is the inability to digest lactose. In the small intestines the enzyme, lactase is deficient in breaking down lactose into two simpler forms of sugar forms glucose and galactose. When lactose is broken down into glucose and galactose it is allowed to absorb into the blood steam. Lactose intolerance develops over time and many do not show symptoms until early childhood or early adulthood.

Casein Allergy

Casein is a primary type protein found in milk and milk derivatives. Some manufactured foods can contain casein. Casein allergy is more common in children than adults. Casein allergy is an immune system disorder. Symptoms can be rashes, eczema and stomach cramps. More severe reaction can occur. Note that manufactured foods may contain casein. Read the labels and check for casein-free products.

Milk Allergy

Milk allergy is a reaction of the immune system to one or more milk proteins. The immune system mistakenly creates antibodies to fight the milk proteins. The antibodies create chemicals in the body that can result in skin rashes, headaches, nausea and or wheezing. Lactose intolerance and cow milk allergy are not the same. One most common allergy that children have is milk allergy. In some instances, some that are allergic to cow’s milk may also allergic to goat, sheep, buffalo and soy milk. Milk allergy is most common in cow’s milk. Milk allergies can appear in the first year of life.

 Products containing dairy products and or lactose :

Processed foods have been altered to increase their shelf life. Not only do they have preservative but contain levels of lactose:

 
-Bread and baked goods
-Processed breakfast foods: doughnuts, frozen waffles, pancakes, toaster pastries and sweet rolls

-Processed cereals
-Instant potatoes, soups and breakfast drinks
-Corn chips, potato chips and other processed snacks
-Processed meats
-Margarine
-Salad dressing
-Liquid and powdered milk based meal replacements
-Protein powders and bars
-Candies
-Non dairy liquid and powdered coffee creamers
-Non dairy whipped toppings
-Casein is a protein found in milk and foods containing milk. Cheese, butter, yogurt, ice cream and some brands of margarine have casein. Casein can be added to non-milk processed products.

Many everyday products contain Gluten or Casein

-Food additives, malt flavoring, modified food starch and etc.
-Many vitamins and medications use gluten as a binding agent
-Some cosmetics
-Lipstick and lip balms
-Toothpaste
-Postage stamps (only used the self adhesive
-Play dough

Well the holidays are here again. It seems like the years are rushing by.  But it is always good to spend quality time with dear friends and family. If you require a gluten-free diet here are few holiday recipes ideas  especially for you!

 

Cranberry-Orange Relish

Gluten Free and Dairy Free Recipe

Ingredients

Makes 2 cups

2 cups fresh or defrosted frozen cranberries 1/4 cup diced red onion 1 large jalapeno pepper, seeded and finely chopped 2 tablespoons fresh lime juice 2 blood oranges, or navel oranges, peeled, sectioned, and cut into 1/4-inch pieces, juices reserved 2 teaspoons freshly grated ginger (not processed) 1/2 cup sugar (no refined sugar) 2 stalks celery, peeled to remove strings, cut in 1/4-inch dice 1/4 cup fresh mint leaves, coarsely chopped 1/4 cup pecans, toasted, broken in pieces Directions Place cranberries in food processor, and pulse to chop coarsely, about five pulses. Transfer to a medium bowl. Add onion, jalapeno, lime juice, orange sections and juice, ginger, sugar, and celery; mix gently. Refrigerate for at least 1 hour and up to 2 days. Just before serving, add mint and pecans, and toss to combine.

Paleo diet consist of  fresh fruits, nuts, no refined sugar and nuts. Original diet modified no refined sugar and unprocessed ginger.

Gourmet Rice Dressing

Gluten Free Recipe

Ingredients

1 cup onions, chopped
1 cup celery with leaves, chopped
4 ounces sliced mushrooms
3 Tablespoons butter or margarine
1 cup rice, uncooked
2 cups gluten-free chicken broth, boiling
1 teaspoon salt
pepper to taste
3/4 teaspoon gluten-free poultry seasoning
1/2 cup sliced almonds, toasted

Directions

Saute onions, celery, mushrooms and uncooked rice in butter until vegetables are tender and rice is golden. Put in a 2-quart buttered, shallow casserole. Stir in seasonings and chicken broth. Cover casserole and bake at 350 degrees for 30 – 40 minutes, or until rice is tender and liquid is absorbed. Fluff with fork, sprinkle with almonds. If casserole has no cover, use foil sealed to top of dish. Makes 5 1/2 cups.

Variation

Reduce celery to 1/2 cup and add 1/2 cup green pepper, chopped and I cup gluten-free ham, cooked and chopped.

3/4 teaspoon GF curry powder can be substituted for pepper

Any websites on Dairy Free AND Gluten free living?

I’m lactose intolerant, I recently find out I’m also allergic to gluten.

The Henry’s/Wild Oats has plenty of food options, but it’s so hard for me to give up bread and find foods at regular stores that have no gluten.

Are there any websites that help with this?? support groups, forums, recipes, suggestions on what to buy…

etc.

I know I can “google it”, so please dont suggest it.
